The anchovy or boqueron is a traditional food of the Basque Country. The Spanish name comes from mouth or boca, of which the anchovy's is notably large. The fish are typically harvested in the spring when they are fat and flavorful. After washing and gutting the anchovies are placed in barrels and layered with salt where they stay for several months to deepen the flavor and aroma. They are then washed to remove the skin and bones and packed in olive oil for our enjoyment.
