Product Description

The ancient property of the Rondolino family is found in the village of Livorno Ferraris, in Piedmont, Italy, and it is known as Tenuta Torrone della Colombara. This site has been famous since 1500 for its abundant water and its fertile soil, and is the source of Acquerello Carnaroli Aged Risotto Rice. It is the only rice variety sown on the farm, to avoid the possibility of inadvertent hybridization with other varieties. After the harvest, the unhulled grains of are aged one or more years in Colombara's temperature controlled silos, a process which allows the rice to "breathe". Aging renders the starch, proteins and vitamins less water-soluble, improving the consistency of the grains and enabling them to absorb more cooking liquid. After aging the rice is then is slowly refined with a special machine called the helix and finally enriched with its own germ by a patented process. The result is nothing better for risotto.  When cooked, the grains become bigger, firmer, do not stick together and taste better. Even a novice can make perfect risotto with this rice, but it is the one chosen by chefs around the world! 500 grams (1.1 pounds)
