Acetaia San Giacomo, in Reggio Emilia, Italy, is where Andrea Bezzecchi oversees the production of his family's aged balsamic vinegar according to strick adherence to traditional methods. His family's balsamic vinegar begins with the cooked grape must of local Lambrusco and Trebbiano grapes. The grape must is prepared over an open fire, naturally fermented, and aged in wooden barrels of decreasing size and of different types of wood according to generations of tradition. The Essenza Balsamic Vinegar is bottled after eight years of barrel aging. It is thick and sweet with flavors of dried fruit, grapes and port. Use it with robust extra virgin olive oil for salads or drizzled on cake and fruit for dessert. 250 ml or 750 ml
