Orecchiette Pasta

Orecchiette Pasta

Product Description

Orecchiette is the most traditional hand-made pasta from Puglia, the boot heel of Italy.  The name comes from the shape which is reminiscent of a small ear and each piece is made with a couple of thumb presses that can only be taught by an Italian grandmother!  Orecchiette is believed to have originated in France and was introduced to southern Italy in 1200. The shape facilitated fast drying and easy storage for sea travel and protection from famine.  In modern restaurants it is paired with everything from lamb ragu to lobster.  The most famous dish is orecchiette con cime di rapa which means "little ears with turnip tops" and is actually made with broccoli rabe. You can pair this pasta with all kinds of sauces or just toss with olive oil and cheese. It's a great pasta for really young children since the little ears are just the right size for little fingers. 500 grams (1.1 pounds)
