Our white balsamic vinegar produced by the Cattani family is made with sweet grape must (reduced grape juice) derived from selected organically grown grapes. Due to the rising fees for organic certification the family recently decided to forego the organic labeling, but they have not changed the product. The rich fruitiness that is suggestive of peach, nectarine and apricot is perfect for the preparation of innumerable recipes, especially those that include fruit, vegetables, fish, and white meats. It is a refreshing alternative to heavier dark balsamics. By itself it is especially good over fresh tomatoes and mild cheeses or use it for a classic vinaigrette with French olive oil, a dab of mustard, shallots and your favorite herbs.
